How to Make Warming Winter Soups

Warming Winter Soups: Fast, Calming, Delicious

There’s nothing like a bowl of soup to bring perspective to our life and health!  

Nearly every winter evening we enjoy an easy soup like this, the variations are endless, depending on what you have on hand. 

Here’s how to make delicious, fast soup suppers:

The key is to have some good broth on hand, veggies in the fridge, and noodles in the pantry.  

In the soup pictured, I used a roasted chicken, but all kinds of things could go into soup. Some ideas: cooked squash, beans, roasted veggies, rice, or other grains, sweet potatoes, and any kind of meat could work easily.

1) First step: look in the fridge, what do you have on hand?

2) Get out the broth, homemade, or store bought, warm it up in a pot on the stove. The amount you will use depends on how many you are feeding. Wing it.

For the soup pictured here:

1) Chop up the chicken into bite size pieces

2) Chop veggies:

Cut some cabbage in long shreds

Slice a few carrots

Chop up an onion

3) Cook noodles:

Put water in a pot and bring to a boil.  Add udon noodles and drain when they are done, put aside for now.  

4) Saute Veggies:

Add the veggies to a skillet with olive oil, sauté the onion, add some seasoning and a half teaspoon of cumin seeds, coriander, and a little hot pepper. (or, add in different spices, or none; it’ll be delicious!) 

Add the cabbage to the skillet and sauté until it’s a little translucent.  

Add the carrots to the skillet.  

Sauté about 5 min.

5) Add everything in the skillet to the pot of broth:

Bring it to a simmer for about 5 min.

Test to see if the carrots are done to your liking.  If not simmer a bit more.

6) Add the chicken to the pot of soup:

Simmer a few minutes to warm everything up.

Add to each bowl:

A portion of noodles 

A tablespoon of miso  

(Miso adds flavor and it’s excellent for gut health.  I like this kind of miso:

7) Ladle the soup into the bowls

Stir in the miso and YUM!!!!  

Round things out with a little flatbread and tahini, or some cheese & bread.  A fantastic winter dinner.
